Today is Thanksgiving Eve. I cannot believe the holidays are upon us again. I am currently at home listening to Carole King and I have started my cooking for tomorrow. I would like to share with you a recipe my mother used to make around this time of year. My mother... I miss her so. I fondly remember her in the kitchen preparing Thanksgiving dinner. She would get out the pots and pans and start cooking. She made the best sweet potato pies on this side of the Earth! This recipe clearly reminds me of her warmth and spirit. I hope you enjoy!!

Wash and pick 1lb. bag of fresh cranberries. Let drain a few minutes. Place them in a baking dish.
2 oranges, peeled, seeded, and cut up in small chunks.
1 apple, peeled and thinly sliced.
2 or 3 handfuls of broken walnuts (or pecans)
1 1/2 cups sugar
Mix and bake in a 350 degree oven for 35 minutes
